Recipe for The One With Lentils And Carrot
250g (8.8 oz) lentils
4 tbsp. olive oil
2 tsp. caraway
1 tsp. curry
80g (2.8 oz) diced feta / diced salad cheese
Salt and pepper
½ bunch of parsley
Boil the lentils for 25 min. Remove the pot from the stove, pour the water from the pot and allow the lentils to cool.
Peel the carrots and grate them on the side of the grater with the bigger holes.
Stir lentils, grated carrot, and spices together.
Add salt, pepper, and olive oil.
Disperse everything on a platter and top with feta and parsley in big bouquets.
Who is Nicolas Vahé?
Nicolas Vahé is French, he is an educated chef, chocolatier and confectionery - and in the year 2000 his skills brought him to Denmark when he was hired at Falsled Kro at south Funen, Denmark. After a couple of years, he started working at the restaurant Fakkelgården in Kruså, until he decided to invest in the sale of gourmet specialities in 2006.
